Pale and dry wine, fragrant, slightly bitter, light and fragrant on the palate, of a transparent straw color with reminiscences of greenish topaz in those that come from Moriles and the Sierra de Montilla.

This acquired alcoholic graduation is totally natural thanks to the high temperatures that are reached during the ripening of the grape.

crafting system
The fine wines are aged under a flor veil and require a minimum aging period of 3 years in American oak casks using the soleras and criaderas system.

Through this method, wines from previous harvests are carefully mixed with new wines. So that the older wines remain in the rows of barrels closest to the ground and the younger ones remain in the highest rows. This task that the winemaker performs each new season is called "running in scale".

The fusion of wines from different seasons that occurs as a consequence of the criaderas y soleras system means that fine wines cannot be classified within any specific vintage.

Gastronomy


It is the ideal appetizer and the companion of all that light cuisine that is colloquially called ¨tapa¨. Typical gastronomy of the area such as eggplants with honey, artichokes with ham, or salmorejo are dishes that, due to their characteristics, fit perfectly with this classic of the Montillan wine tradition. Likewise, fine wine can be a perfect companion to the famous Cordovan oxtail as well as all kinds of red meat.
