Fine wines are aged under a natural yeast layer in American oak casks for a minimum of three years following the Spanish traditional fractional blending system.
Through this system, fresher wines are carefully mixed with wines from past harvests. Aged wines are stored on the lower level of the set of barrels and fresher wines on the top levels. As a consequence of this blending system, fine wines do not have any particular vintage.
