Pedro Ximénez wine is obtained by sun drying the grapes until they nearly become raisins. Usually, it is also subjected to an aging process in barrels which will make to change its color slowly from amber to jet shades. This wine starts with an oxidative aging to later finish its process in American oak casks following the traditional fractional blending system for a minimum of two years period. The minimum grape sugar content is approximately 272 grams per liter.
