The alcohol content in this wine is obtained naturally due to the high temperatures reached during the grape ripening process.
This wine production begins with a careful ripening of the white Pedro Ximénez grape variety, abundant on the area.
The grapes used for the production of this fresh wine are harvested before its total ripening in order to obtain a wine with a lower alcohol content.
Due to the climate change, the harvest on our region comes ahead of time every year when temperatures are really high. In order to accommodate these changes, our havest is now scheduled at night time to prevent high temperatures from compromising the quality.
Our manual harvest allows us to select the best bunches and to obtain the first grape juice from different presses.
The fermentation has two phases: the first one is done in stainless steel tanks with a controlled temperature and the second one takes place on underground concrete jars using the spray system.
Once the fermentation is finished, the wine is kept under a natural yeast layer until it is bottled. Unique and exclusive characteristic of the wines of the area.
